One of our favorites of late is this incredibly easy pesto chicken. It has two ingredients if you choose to make it the way I did with a jar of pesto and chicken! This was the key to both good flavor and incredible speed:
Other than tossing some in the oven with salt and pepper, this is one of the fastest, great tasting recipes I made. You can also make this ahead, freeze and then pop the whole thing in the oven when you are ready.
Pesto Chicken
Ingredients:
- 8 oz jar Pesto Sauce (or, if you are so inclined and have the ingredients, by all means, make your own!)
- 1 pound frozen chicken tenders
2. Grease baking dish.
3. Put tenders in a large bowl and add the jar of pesto. Mix until chicken is covered.
4. Pour contents into baking dish. Spoon any extra pesto over the chicken.
5. Bake for 30-40 minutes or until chicken is cooked.
6. Done! It's that easy!
The oil in the pesto made for some very moist chicken and the basil pesto gave it a great flavor. Give it a try!
Happy eating,
Carrie

ReplyDeleteYay! "Good flavor and incredible speed" are two aspects of a successful dish in my book! I plan to try this chicken dish soon. It looks lovely, Carrie!
ReplyDeleteRobin, that's a great question - it would be all about the pesto, I would think.
ReplyDeleteAmy, it's REALLY good! I was kind of surprised - pleasantly so.
