Video: Freezer Meals

I was checking out lots of different freezer cooking videos to find one to share with you and decided this one, by Natalie Dixon was the one I liked the most.  She has some good hints, yummy recipes and seems pretty "down to earth."




Her video is just over 16 minutes long, so grab a cup of coffee, perhaps a notepad and prepare to be impressed... I can't wait to try her chicken recipes!

In addition, after watching her video, I would definitely stop by her website (A Turtle's Life for Me)  for more info - I know I AM!!

Monday Menu #11

My middle sweetie and her other half are here for the week, so food choices change, especially because the reason she's home is so that she can coach field hockey with our youngest and I all week.  From 5-8 pm... 1 hour away from home. 

As I make the plan for the week, I need to keep that in mind as well as the fact we are leaving the "men folk" home every night.  Not that either isn't capable of pulling things together, but it's definitely complicated.

Here's what I am thinking MIGHT work:

Monday - Crockpot Pulled Pork (either bring along and eat on the way or eat when we finish).  I really like this recipe (very tasty rub mix), but I do mine in the crockpot, just for time and OMG it's a bazillion degrees right now! 

Tuesday - Left-over Pulled Pork Sandwiches with Coleslaw

Wednesday - BLT Wrap's


Thursday - Grilled Chicken Tenders and Bacon Subs (similar to Subway)


Friday - Coach's Dinner Out....yup!  Can't wait!

Saturday - Lasagna (pulled from freezer)


Sunday - Grilled Cheese and Homemade Fries

Monday Menu #10 (a few days late)

Hope everyone had a lovely 4th of July weekend!  It was just fantastic here.  Lots of fun with the family - life is good!

Things have been a bit crazy here (no big surprise) and I didn't get near the computer to post our meal plan for the week on time - so I figured "better late than never" was a good motto for this.  Here's my "plan" for the week.  We'll see how it goes!


Monday - Breakfast for dinner (omelets, hash browns & cinnamon buns cooked in the waffle iron!)
We have made these a few times - the "Grands" are pretty GRAND - we like the smaller ones, ourselves.)

Tuesday - Grilled hot dogs & potato salad (quick and easy!)

Wednesday - Crockpot Teriyaki Chicken

Thursday - Leftover Teriyaki Chicken Quesadillas
  • Just butter the tortilla shell, lay it in a skillet and spread shredded chicken on it.  Add onions, and/or salsa and shredded cheese.  Lay a second tortilla on top and flip after several minutes.  Remove when browned, cut in pieces and serve.

Friday - Pizza


Saturday -Super Salad Night - whipping up a variety of salads for a summer supper: Tossed Salad, Macaroni Salad, Broccoli Slaw and anything else that strikes my fancy!

Sunday -  Chinese Take Out (treating my daughter and her boyfriend while they are home for a week)

Monday Menu #9

Week #9 is here!  Hubby and I were away for the weekend, so we're going to shift the actual menus now (perfect timing) to start on Monday.  Kind of silly how I was doing it before... but all done!

Let's see what we can come up with, shall we?

Monday - High School Softball Banquet - I don't have to cook!  :)

Tuesday - Cheesy Ham Pasta Bake (recipe tomorrow)

Wednesday - Breakfast for dinner with this amazing cinnamon cake!


Thursday - BBQ for July 4th with burgers, dogs, salads and such!  What's for your July 4th meal?

Friday - Baja Chicken and Slaw Sliders


Saturday - Steak Quesadilla


Sunday -Chicken Salad Sandwiches & Potato Salad

Had a few places to be on and off this week, as well, so more portable meals necessary.  Hope all are well!

Monday Menu #5

Here we are at week #5!  Time's a flying!

Looks like the temps are going back down to the 70's, so I'll be able to do some cooking.  We've been in the 90's for 3-4 days and it will be nice to see those lovely temps again!

Spring sports are winding down here - our girl's softball team IS going to the semi-finals this week (Way to go, Cougars!!) but other than that, it's a quiet week here.  Frees things up with more dinner options, when we aren't running from here to there, as is our norm.

Monday Menu: Week at a Glance #3

It's so helpful to have a plan, that's all I have to say!  This week I did tweak things day to day, but it worked overall.  How about you?  Have you tried planning out your meals?  Does it seem to help?

This is a pretty crazy week of sports for multiple people this week.  Me?  I'm the driver and food provider, so all good.

I will continue to bring you ideas for the table - linking to wonderful recipes that I want to try, as well.  As my repertoire grows, more and more will be mine.  For now, it's a mix!  :)  Feel free to send me ideas you think I should try.

Monday's Menu: Week at a Glance #2

Let's build this repertoire, folks!  Last week's plans went pretty well - I did find that I swapped a couple around and there was one night the family said: "WE WANT CHINESE!" and when your youngest completes her first year of college, you run with it.  GO, SHAUNA!

Here's what's planned for this week:

Sunday- Baked Ham Dinner (Happy Mother's Day!)  Have you ever tried cooking on in a crockpot?  Here's my recipe!

Monday - BBQ night - Grilled Hotdogs & Potato Salad

Tuesday - Ham Salad Croissants

Friday - Left-overs (finish things up, guys!)

Saturday - Breakfast for Dinner (need super easy - working Children in the Arts today!)  How about omelets?

Monday's Menu - the Week at a Glance #1

One of the series I'd like to offer up is thoughts about possible meal plans.  I've found it takes a huge amount of stress off my shoulders when I take the time to plot out what we are going to eat for dinner that week and lessens the nights we say "Oh, heck... no idea so let's go out for..."

This will be crucial in the fall and winter when I am coaching field hockey and basketball and you will see LOTS of crockpot and freezer recipes then - probably 3-4/week.  But for now, let's see what we can do.  I will toss out ideas for what we are having and link them to recipes for you.  Because we are just starting, most will be links to ones I will be trying and you'll be visiting sites all across the Internet.  Just right click and "Open in a new tab" so you can come back easily.

Bri's been thrilled with all the new things and after dinner is eager to give his opinion, which is great.  DD Shauna will be home starting this week - we'll see how she likes the turn of events.  I know my son likes popping in for one reason or another (They live next door - we are so fortunate!  It's great!) and is always asking what I'm making now.  I did a jalapeno dip the other night (yes, Gentle Reader, the recipe is forthcoming!) that he ended up having to take some home!

So, here's what's on tap for this week:

Sunday - Cinco de Mayo, Arroz con Pollo (chicken with rice)

Monday - Loaded Baked Potato Chicken Casserole (with left-over chicken from yesterday)

Tuesday - "Cook & Carry" (softball game tonight, so bringing it along) Macaroni & Tuna Salad (my VERY basic recipe of cooking macaroni, cool and add tuna fish and salad dressing, season with salt and pepper and put in individual containers)  I bring along chips and drinks.

Wednesday - Crockpot Pulled Pork


Thursday - Turkey Cranberry Monte Cristos

Friday Hawaiian Pizza

Saturday - Stuffed Shells (frozen, needs thawing overnight)
