Apple Bread Pudding (with Hearth Cooked Applesauce)

Good morning!

After making applesauce on the hearth the other day, I came home with a small bowl leftover.  One can't have something so tasty left lying around, one needs to find a way to use it!  We were having pizza for dinner, applesauce with it wasn't a good idea, but making something for dessert while the pizza was cooking sounded good to me!

I decided on an apple bread pudding since I had the ingredients I needed.



Apple Bread Pudding

Sliced bread, cut into cubes - enough for about 3 cups of bread crumbs
1 1/2 cups homemade applesauce
2 tbsp butter + butter for greasing pan
2 cups milk
2 eggs
1/2 cup maple syrup
1 tsp vanilla

1. Butter your pan and add half bread in a layer covering the bottom.
2. Spread applesauce over the bread crumbs.
3. Add rest of bread crumbs and dot with pieces of butter.
4. In a bowl, combine milk, eggs, maple syrup and vanilla.
5. Pour the mixture over the bread and applesauce.
6.  Cook in a 350 oven for 50 minutes.
7.  We like ice cream (or in the case of the photo above, whipped topping) on top.

We found this delicious, but it could have used a bit more sugar, so be sure your applesauce is sweet enough.  If not, I would add maple syrup or another sweetener, your choice, to the applesauce or OVER that layer.  That would be because I have an incredibly sweet tooth...just sayin'...
