Pesto Chicken --> SUPER Quick!

I like to buy the bags of chicken tender pieces for multiple reasons, the main one being ease of use and another the ability to control quantities, something trickier to do if you buy chicken by the pound.  It's rather easy to have them in the freezer for a quick meal, as well.

One of our favorites of late is this incredibly easy pesto chicken.  It has two ingredients if you choose to make it the way I did with a jar of pesto and chicken!  This was the key to both good flavor and incredible speed:

Other than tossing some in the oven with salt and pepper, this is one of the fastest, great tasting recipes I made.  You can also make this ahead, freeze and then pop the whole thing in the oven when you are ready.


Pesto Chicken

Ingredients:
  • 8 oz jar Pesto Sauce (or, if you are so inclined and have the ingredients, by all means, make your own!)
  • 1 pound frozen chicken tenders
1. Pre-heat oven to 375 degrees
2. Grease baking dish.
3. Put tenders in a large bowl and add the jar of pesto.  Mix until chicken is covered.
4. Pour contents into baking dish.  Spoon any extra pesto over the chicken.
5. Bake for 30-40 minutes or until chicken is cooked.
6. Done!  It's that easy!

The oil in the pesto made for some very moist chicken and the basil pesto gave it a great flavor.  Give it a try!
